Variation on Ingredients:
2 cups almonds finely chopped almonds
1/2 cup pecans
1/2 cup walnuts
1/2 cup pine nuts
1/2 cup almond butter
1/2 cup coconut oil
1/2 cup shredded coconut (sweetened unfortunately because that was all the store had)
3 tsp pure vanilla extract
2/3 cup of honey (only because that was all I had)
1 cup unsweetened whey protein powder (or 60g of Protien)
3 large eggs
1 ripe banana
1 teaspoon sea salt
1 cup raisins
-Up the baking time to 15-20 minutes at 300-325 + 5 minutes on broil. After 12 minutes + 3 minutes broil, they cooled and setup nicely albeit slightly gooey in the middle.
-I used two 8×8 pans (initially tried to fit it all into one 8×8 & it was too thick).
-1 9×17 pan would have worked perfectly.
-I soaked the nuts overnight as some of the recipes suggested — lots of work, only do a few (4-5) cups at a time, sometimes less is more >.> <.<
-The protein bars are absolutely awesome!
